Scialatelle is a noodle pasta that originates from Amalfi. It's a dough made with AP flour, egg, whole milk, parmigiano-reggiano, fresh basil, olive oil, salt and black pepper. It has a chewy texture and thicker shape similar to an udon noodle. We describe it as a fettuccine noodle mixed with the texture of gnocchi. Erich LOVES this noodle. It pairs super well with most sauces, especially with seafood based sauces.
